Haricot Verts Salad aka Green bean salad. Yum.
RECIPE:
Green beans (about 1/2 cup per person or 6-8 beans)
1/2 an orange (for the juice)
1tsp of chevre cheese crumbled (per person)
1 tsp Dijon mustard (per person)
1 tsp olive oil (per person)
1 tsp of fried shallots(per person)
1 tsp pickled red onions (per person)
1 tsp balsamic vinegar (per person)
1 tsp of cilantro lime pepper salt (or your salt of choosing)
tomatoes halved (about 4-6 grape tomatoes per person)
mixed greens of your choosing (we often use Romaine, kale, arugula, sorrel & green leaf mixed)
Procedure:
Warm your green beans in neutral oil in a sauté pan until 2 sides of the green beans blister
then turn your heat off and add olive oil, Dijon mustard & balsamic vinegar
Next, add the remaining seasonings/ingredients into the mixing bowl on top of the greens
Lastly, add your cooked/warmed green beans on top of your salad and enjoy!
